Sipology Coffee, Eatery and Gallerie by Louise Kripal

Earlier this month I took a stroll over to Sipology, East Village's newest coffee house, to interview one of the two owners Isaac (the other owner is Oscar). What a pleasant visit it was, as I found the answer to my question as to how Sipology came about to be as refreshing and exciting as this classy yet laid back establishment itself.

Coming from occupations of real estate and medical billing, neither Isaac nor Oscar had any prior experience in the café or gallery field. Both did however have a burning desire to open a business that would provide a special space, meaningful and open to persons from all walks of life. Sipology is just THE place! Occurring almost organically it seemed, a unique team of "specialists" including a roaster, pastry chef and gallery curator (with over 22 years of curating under his belt), and eight other staff came together to allow Isaac and Oscar's passion to come fully alive on Sipology's opening day, March 16, 2009. You have to try the cup cakes and the Mexican Chocolate Mocha is a specialty of the house.

Sipology's beautifully remodeled "gathering space" sports three gallerie (yes they spell it that way) areas. Part of the gallerie and the upstairs is set aside for local Long Beach artists (now Michael Pukac) while the main gallerie is reserved for more established and emerging fine artists (currently German artist Marc Remus is exhibiting his "Universe" and "Cities" Series).

They also have plans in the future to double the existing space which will include a full grill.
